May 07, 2013

With two outlets in Benaras, the brand will soon expand its outlet in Lucknow and Noida in the next three months.

A Varanasi village comes alive at 37/1Purna Das Road, Kolkata with the all-vegetarian fine dining outlet called Baati Chokha named after a traditional delicacy of Beneras. Measuring 1300 sq ft, the restaurant accommodating 60 persons gives the rustic look and feel of India. Sidharth Dubey, one of the owners shared, "We have two outlets in Beneras and as we get lot of Bengali customers, it is their demand which has inspired us to open Baati Chokha here in Kolkata. Soon within three months time we are opening this theme restaurant in Lucknow and Noida.”

Before the guests enter the heavy wooden doors of Baati Chokha, on the left hand side one would find a man sitting by a millstone (chakki) making fresh sattu from roasted chana. On the right is placed a clay oven on which dal and rice are boiling away. The decor of the restaurant is a treat in itself which gets completed with charpoys, wall art done with mud and fodder resembling the famous picturesque ghats, sarnath stupa, cattle rearing and so on done by their in-house team.

A dedicated artist team from Benaras, Dinajpur (West Bengal) and Assam completed the interior work within three months for the outlet. To add on the real and living ambience a small temple and a well has been created inside the eatery. The ceiling has been explored in a different manner with hand crafted bamboo rafters and canopy of colourful shamianas. The tables are well-lit with electric lanterns giving a rural experience. The waiters, dressed in dhoti-kurta, brings the menu pasted on a winnow (kulo) and the food is served on wooden platters covered with lotus leaves, hard clay bowls and kulhars which enhances the rustic flavour of the food.
