The Pan Cake Story aims at 100 outlets across India

Mumbai-based The Pancake Story (TPS) claims it is the only outlet to have maximum number of deserts under one roof. Currently located in Lokhandwala, the confectionary brand plans to start more stores in Bandra and Kandivali very soon. Falak Merchant, Founder, The Pancake Story, in an exclusive chat with Retail4Growth, explains their expansion plans.

How do you match the design of your store with your theme?

The design of the store is done keeping in mind the street food culture. One gets to see the food being prepared live once it’s ordered. We have used shades of blue, white and sand beige which keep the store looking fresh and young. Our food being ‘Fresh’ and our target audience being ‘Young’, it just blends perfectly with what we stand for.

What is the theme of the design in your store?

It is a Greek theme. I was travelling on a vacation and it just caught my eyes, and I fell in love with the theme. The homes in Greece are painted with sky blue and white colour and of course the oak beach colour has its connection with the sea.

Blue being predominant in your design, what’s the significance of the colour in your concept?

Its scientifically proven that blue is a colour that excites people and it also affects their mood. Blue is the colour of ocean and it has a calming effect on people. We incorporated blue and white stripes with beige in our interiors and artwork because this connects well with the freshness and calmness of the seaside, a place where we all love to spend our time!

Any reason why you have kept the furniture and lighting simple?

Our furniture is modern and lightning is a blend of old-fashioned lamp shades with blue colour giving out warm lights. The bright celling lights keep the store cosy as well as well lit. The lightweight contemporary furniture, with tables made of oak wood and white & blue striped seat puffins is the right combination for our young customers.

What are the in-store activities you do?

We have board games like Ludo, card games like UNO, table top games like Jhenga and more in store for our customers to enjoy their food with games. We also do festive and seasonal offers and inaugural offers for instore activities. We also engage with some influencers and have blogger tables and music bloggers too.

What are your expansion plans?

In the next 2 to 3 years, we are looking at opening up 100 outlets across India to become a product leader in the space of desserts.
