At In-Store Asia another interesting session was presented by Chef Sabyasachi Gorai, Founder, Fabrica by Chef Saby on “Multi Sensory Branding in Retail - Specialty Dining”.

Chef Sabyasachi presented his thoughts on how the different senses enhance the overall food experience because it is in itself a ‘sensory journey’, He shares that it is vital to seek unique experience of flavours, textures and aromas because the food is consumed not only for its own physical properties. Hence, the five senses - sight, sound, taste, smell and touch completes the enter journey of dining.

Gorai also mentioned that the psycho-emotional effects should be kept in mind while planning any fine dining experience. In order to make a connect with the millennials and next generation who are always very active in social media and connect with the digital world at every go, it is needed that we understand our diners as they also want to know the place and the food they are spending time on. Also in order to explore the Indian market it is vital to go back to our roots, know more local ingredients and season recipes as that will help fulfill the Indian Gastronomic Journey.
