ISA 2018: Speaker: Chef Sabyasachi Gorai

With over 20 years experience in the culinary world, Chef Sabyasachi Gorai will present his topic “Multi Sensory Branding in Retail - Specialty Dining” at In-Store Asia 2018, which is scheduled to be held between 22nd-24th February 2018 at Bombay Exhibition Centre, Goregaon, Mumbai.

Chef Sabyasachi Gorai, more fondly known as Chef Saby in the industry will present  his topic “Multi Sensory Branding in Retail - Specialty Dining” at In-Store Asia 2018, the largest retail experience expo and convention in the Indian subcontinent, which is scheduled to be held between 22nd-24th February 2018 at Bombay Exhibition Centre, Goregaon, Mumbai. With over 20 years experience, the ex-Director of Kitchens at Olive Bar & Kitchen, Chef Saby moved on from his glamorous job to a more gratifying role as the Ring Master at Fabrica by Saby, a boutique restaurant consultancy venture and eventually launched his own restaurant, Lavaash by Saby – which has been featured in Conde Nast top ten restaurants of 2015.  Chef Saby is the only recipient of the most coveted National Tourism Award, for “Best Chef of India”, awarded by the President of India.  He was singled out as one of the “five people to watch out for” in Fortune India’s 2013 list, the only one in his profession. He has also been trusted with the responsibility of being the President of the Young Chefs Forum, under WACS (Worlds Association of Chefs Societies) , to groom the budding chefs of India. Saby, who has a cult following in the culinary world, started his career in hotel management from IHM Calcutta and did some odds and ends before being enchanted by the kitchen where he saw his creativity take shape. Given his background in music and arts, Saby started to use food as a medium of creative expression. After getting a hold of the medium, he treated the plate as a canvas. His long list of successful restaurants, post Olive, include Lavaash by Saby, Sodabottleopenerwala , Junglee Billee, Olive Bistro, The Wine Company ; The Beer Café (Delhi, Mumbai, Pune), “Amreli” at Hotel Diplomat . Apart from numerous  appearances on cookery shows and guest judges such as Masterchef India, his solo cookery show – “The Urban Cook” on  Living foods was a new age show, Currently he is the brand ambassador for the state funded campaign called Olives from Spain, and he is also promoting the food produce of United States Of America and Canada in partnership with the Embassy of USA , and the High Commission of Canada.
Quiz him about his entrepreneurial sojourn and Saby says, “There was this excessive desire to leave behind a legacy, especially for my daughter, and that made me push myself towards entrepreneurship”.
